Pulled BBQ Chicken And Coleslaw Sandwiches. An easy to make sandwich that combines Pulled BBQ Chicken and Coleslaw for a delicious mouthwatering recipe.
You know that moment you decide you’re in the mood for something that’s not the norm for this time of year? Then what you wind up making turns out delicious??! Oh yes, and the best part is when it’s super simple and doesn’t require a million ingredients to make.

That’s what we did this past Monday. For some reason we were craving a sandwich of some sort. Hubby can cook for hours and be content, but not this busy momma. I’m all about simple and easy to make meals. So the fact that these Pulled BBQ Chicken And Coleslaw Sandwiches were easy to whip up, was the icing on the cake.

Ingredients:

Chicken-
2 lbs of chicken breasts (thawed)
1/4 cup of brown sugar
1 1/2 tbsp of Worcestershire sauce
1 1/2 cups of BBQ sauce

Coleslaw-
7-8 oz of pre-made coleslaw mix (you’ll find it with bagged salads)
2/3 cup mayo
1/4 cup sugar
1/8 cup apple cider vinegar

Instructions

Boil chicken in salt water (basically add salt to your water for taste). In the meantime, prepare your coleslaw. We used a pre-made bag of coleslaw mix, told ya it was easy! 😉 You’ll want to mix the mayo, sugar and apple cider vinegar before adding it to the coleslaw.

Once mixed, add it to the coleslaw and stir well until it’s fully covered. Place it in the refrigerator. Once your chicken breasts have fully cooked take them out of the water. I always rinse the chicken to get the gooey stuff off (sorry for the details, just keeping it real). Next, shred the chicken with a fork and place in a bowl. Mix the brown sugar, Worcestershire sauce and BBQ sauce together. Add it to the chicken and stir until the chicken is coated well.
Coleslaw

Use a roll of your choice, we like potato rolls for this recipe. Add a large spoonful of BBQ chicken and an even larger portion of coleslaw. Sit back and enjoy the party in your mouth. Seriously, it’s delicious.

This recipe should yield approximately 8-10 sandwiches depending on how much you fill up your sandwiches.
