These tasty and crispy Garlic Parmesan Wings make the perfect appetizer for game day or any occasion. Easy to make and better than takeout!
On weekends, there is always a sports game playing on our TV, and with football season in full swing, it’s not uncommon for us (mostly my husband) to try to replicate our favorite game day food at home. This particular wing recipe has become a staple in our home, and my absolute favorite flavor of wings.
I don’t know about you, but I default to takeout when it comes to chicken wings. For some reason I thought they’d be more complex to make, but not only are they easy to make, this garlic parmesan wings recipe might just be better than your favorite takeout wings. With that being said let’s dive right in!
Ingredients:
- Chicken wings
- Adobo seasoning
- Garlic powder
- Onion powder
- Garlic paste
- Mayonnaise
- Parmesan cheese
- Pepper
- Oil
- Parsley (optional for garnish)
How to prep chicken wings
Prior to any cooking or cutting, we want to make sure that the chicken is clean. I know this step can be controversial, so if you don’t clean your chicken feel free to skip to the next step.
First, remove any remaining feathers from the wings (yes, it happens). Next, fill a large bowl about 3/4 of the way full with water. Then you can add about a half cup of vinegar to the water. Next, place your wings into the bowl and begin cleaning them off. This should only take a couple of minutes.
How to cut chicken wings
Once rinsed, you can place the wings onto a cutting board and pat dry with paper towels. Even if you don’t clean your chicken, this step will remove excess moisture that can cause the chicken skin end up soggy.
Next you’ll need to use a knife to cut the wing tips off, as well as making a cut at the joint between the flat and the drum. I suggest using a sharp knife because the joint may not always be the easiest to find, so will ensure its cut through the wing even if not directly at the joint.
Seasoning chicken wings
You may already have most of the seasonings used in your cupboard, but there is one special seasoning that is used in almost every dish that we eat, and that is adobo. Adobo is an all-purpose seasoning that is widely used in Caribbean homes and gives food tons of flavor. It’s made up of turmeric, onion powder, garlic powder, oregano, and other spices. I highly recommend it! Now let’s get you some measurements so that you can season up these wings.
- 1 tablespoon adobo
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of black pepper
Combine these together in a small bowl so that all the flavors can become friendly with one another. Add your seasonings to the bowl with the chicken and rub the seasoning on to the wings thoroughly making sure that the whole wing is coated.
Tip: If you want more flavor, cover the bowl and place it in the refrigerator for 1-2 hours. The seasoning will penetrate the chicken and draw out moisture, producing a more flavorful wing.
Frying chicken wings
To fry the wings, you can use a frying pan, but we prefer using a caldero (aluminum pot). Turn the stove to medium heat and give the oil some time to heat up. Once the oil is ready, add the wings using tongs to avoid splatter.
Fry wings for approximately 25-30 minutes turning occasionally throughout the cooking process. Once crispy, place the wings in a clean bowl lined with paper towels to drain any excess oil. You should fry the wings in batches to achieve the crispiest wings.
Garlic Parmesan Sauce
To prepare the garlic parmesan sauce, you’ll need 3 main ingredients, but we like to kick it up a notch by adding a few seasonings:
- 1/2 cup shredded parmesan cheese
- 5 tablespoons of mayonnaise
- 2 teaspoons of garlic paste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- pepper (to taste)
- 1-2 dashes of hot sauce (if you want to add a bit of heat)
Combine ingredients in a bowl. If you’re frying the wings in multiple batches, leave sauce for the other wings. Add the fried wings and toss to coat. Once coated well you can plate them. I usually sprinkle additional shredded parmesan on top.
Note: Other garlic parmesan wing recipes use melted butter or grated parmesan, but we prefer shredded parmesan and mayo which has worked well for this recipe. We share what we use in our home, but please use whatever works best for your personal taste!
If you’re diving into these wings, now is the time to enjoy. If you’re serving them to guests, and want to make an impression, sprinkle a little bit of finely chopped parsley.
Serve with ranch dip on the side, or eat as is, either way, you win. Now you have yourself some 10 out of 10 wings and enjoy!
