When I was 12 years old my abuelita (maternal grandmother) passed away from diabetes. With Hispanics in the U.S. twice as likely as non-Hispanics to develop type 2 diabetes, I have to be even more proactive about the lifestyle choices that I make. Although I consider myself a foodie at heart, I also try to make smart choices with the foods that we eat.
One of my favorite ways to incorporate healthier food is through delicious recipes that my family will enjoy. In today’s recipe you’ll find an ingredient that is the only fruit that contains monounsaturated fat, and is sodium, cholesterol and trans-fat free. Any guess what it could be? If you guessed correctly, you know it’s avocado. Avocados are great to use in many recipes and this yummy grilled chicken with tropical salsa is just one of many.
Grilled Chicken with Tropical Salsa
Ingredients
4 boneless and skinless chicken breasts
1 Hass Avocado
1 Pineapple
1 Tomato
1/2 Red Onion
1 Lime
Cilantro
Salt
Pepper
Makes 4-5 servings
Directions
Season chicken with salt, pepper or any seasoning you prefer. Grill chicken on both sides until well done. Cut half of a fresh pineapple into small cubes. Dice one small tomato and half of a red onion, mix together with minced cilantro, set aside.
Slice Haas Avocado into cubes. Toss in cubed avocado into pineapple and tomato mixture. Squeeze fresh lime juice for flavor and to prevent Avocado from browning.
Spoon salsa mixture over grilled chicken breasts and enjoy.
This simple recipe is full of delicious flavors that compliment each other. The best part is that it only uses fresh ingredients. Eating well to maintain a healthy weight is one of the most important things we can do for ourselves, so we might as well enjoy the process. 🙂
