Before the nip of fall is even in the air my taste buds start looking for reasons to incorporate fall flavors. One of my favorites is apples and cinnamon. What better way than in a cookie? These cookies are the perfect combination of spicy and moist. They can be enjoyed with a cup of coffee or tall glass of milk. They carry a strong spice flavor reminiscent of an apple pie- if it seems to be a bit much for you, you can always reduce the spices, but it truly isn’t overwhelming. I love my recipes to have a lot of flavor to them so I tend towards a heavy hand with the spices. This is a great recipe to include the kids in for an afternoon snack, or a homemade food gift for friends, teachers, and neighbors. Enjoy!
Apple Spice Cookies
Ingredients:
3 medium apples
2 ¼ cup all purpose flour
1 ½ cups brown sugar
1 Tbsp. Apple pie spice
1 tsp. Cinnamon
½ tsp. Nutmeg
¼ cup milk
1 egg
½ cup unsalted butter
1 tsp. Vanilla
1 tsp. baking soda
pinch of salt
optional:
¾ cup total any combination of the following
walnuts
almonds
raisins
craisins
Directions:
Preheat oven to 350°. Peel and dice apples finely, set aside. In the large bowl of a hand or stand mixer, combine butter, sugar and milk- mix until smooth. Add egg and mix.
In a separate bowl combine flour, apple pie spice, cinnamon, nutmeg, baking soda, and salt.
Add flour mixture a little at a time to wet ingredients until fully incorporated. Mix in vanilla.
Fold in diced apples, and optional ingredients in at this time.
Scoop dough by heaping tablespoons onto baking sheets lightly sprayed with nonstick cooking spray or covered in parchment paper. Bake for 10-12 minutes, until tops are golden brown. Remove from oven and allow to cool completely before storing in an airtight container.
