I have mentioned in the past how I absolutely love parfaits. It is a super easy and delicious dessert that is always a crowd pleaser. The recipe I’m sharing today is one of my favorites, a Dulce de Leche Parfait. So what is Dulce de Leche? First let me give you a hint by translating the meaning; “Candy of Milk”. Dulce de Leche is a combination of milk and sugar that is slowly cooked until it’s caramelized. It is a common dessert in South American countries and can be eaten over ice cream, with fruit or however your heart desires. I’m super excited to share this recipe with you and I hope you’ll love it as much as I do.
Dulce De Leche Parfait Recipe
Typically you only need a 14oz can of sweetened condensed milk to make Dulce de Leche, but I wanted mine to be smoother and with some extra flavor so I added 2 tbsp of Coffee-mate Vanilla Creamer. Why vanilla? Because vanilla is familiar and calming, but also upbeat and exciting. So the next time someone calls you vanilla, take it as a compliment. 😉
Next, pour the sweetened condensed milk and Coffee-mate Vanilla Creamer in the top of a double-boiler pan and cook over low heat. Stir occasionally for an hour. Once it’s a caramel color, take out and mix it well in a bowl until smooth. *There are other cooking methods that don’t require a double boiler, but this is the one I prefer.*
Next, fold the whipped topping into the Dulce de Leche mixture. Make sure you scrape all of the sides of the bowl while folding to pick up all the sauce. Place the parfait mixture in the refrigerator until cold, otherwise it will be hard to scoop and a bit runny.
Put the parfait together. Add crushed graham crackers at the bottom of a glass jar, layer with parfait mixture, add whipped topping and top off with more crackers. Repeat if desired.
Grab a spoon, dig in and enjoy. This dessert is creamy, light, and the perfect way to satisfy your sweet tooth. I think my little guy agrees.
