Now that November has arrived, I’m kicking my plans into high gear for the holiday season. For us, it simply means gathering with loved ones and sharing a delicious dish or two. We have lots to celebrate this month; our baby girl will turn one this week and we’ll be celebrating our wedding anniversary along with Thanksgiving.
One of my favorite dishes to make this time of year is Sweet Potato Casserole. This dish is a crowd pleaser and will make a perfect side dish for any gathering.
Ingredients:
4 sweet potatoes
2 cups of white sugar
2 tablespoons of milk
4 tablespoons of butter (unsalted)
1 teaspoon of vanilla
1 teaspoon of cinnamon
1/4 teaspoon of salt
1 bag of Jet Puffed Mini Marshmallows
Glazed Pecans-
2 cups of pecans
1 tablespoon of butter (unsalted)
6 tablespoons of brown sugar
1/4 cup of water
1 teaspoon of cinnamon
Chop and boil potatoes until tender. Drain water and mash the sweet potatoes. Add sugar, milk, butter, vanilla, cinnamon and salt and mix well. Pour mixture inside a 9×9 (or similar) greased baking dish and set aside. Preheat oven at 350 degrees.
Put butter in pan over medium heat. Pour in brown sugar, water and cinnamon. Stir and allow mixture to thicken, add pecans. Turn off heat and stir for a few minutes to coat pecans well. Spread pecans (plus all the glaze) over the sweet potatoes, place in oven and bake for 20 minutes.
Take out sweet potato and pour Jet Puffed Mini Marshmallows over top. Bake for another 10 minutes until marshmallows are light golden brown.
Let it cool for a few minutes and enjoy! This dish is so good and it’s a family favorite during the holiday season.
Now we all know that you need various options for Thanksgiving dinner or family gatherings. So I’m also sharing another one of our family’s favorite side dishes: Italian Sausage Stuffing. When I think of stuffing, I think of Stove Top. It’s super easy to make and full of flavor. For this super easy recipe I used the Cornbread flavor.
Take 3 sweet Italian sausage links out of their skin, sauté and set aside. Next add some chicken broth to deglaze the pan and add a sliced sweet onion. Cook well until it’s caramelized. Make two boxes of Stove Top per box instructions. Add cooked sausage and onions to stuffing, mix well.
My kids loved this recipe and it will definitely be on our menu this Thanksgiving.
