Chocolate and peppermint cakes? Yes please! If you have been following this blog for a while, you know that I love me some chocolate and mint flavors. These two flavors are truly a matched made in dessert heaven. What better way than to kick off the holiday season, than with a delicious chocolate and peppermint dessert recipe.
These Mini Chocolate Peppermint Icebox Cakes are perfect for a simple at-home dessert or to take to a holiday party. Plus now you’ll have the perfect excuse to use your surplus of peppermint candy canes. 🙂
Mini Chocolate Peppermint Icebox Cakes
Ingredients:
- 1 box (9oz) Famous Chocolate Wafers. (Typically in the ice cream/toppings section)
- 1 cup (8oz) Heavy Whipping Cream
- 3 tablespoons powdered sugar
- 1/4 teaspoon Peppermint Extract (adjust according to taste preference)
- Crushed peppermint candies for garnish (optional)
Instructions:
Add whipping cream, powdered sugar and peppermint extract to a bowl. Use an electric mixer (use the whisk attachment) to beat on high speed until stiff peaks form, about 2-3 minutes.
Spoon 3/4 of a teaspoon of whipping cream on Famous Chocolate Wafers, press another cookie on top. Continue doing this until your cakes are 5 cookies tall.
Add whipping cream and crushed peppermint candies to the top of cake to garnish.
Place cakes onto a serving tray and refrigerate overnight. You want to place them on the serving tray immediately since cakes will soften and might become difficult to move. Makes 8-9 mini cakes.
