These Double Chocolate Mint Oreo Cookies are delicious and very easy to make. If you’re a chocolate mint combination lover like me, then you must try these cookies.
I used the following 3 ingredients: Mint Oreo cookies, Andes mint chocolate chips and Ghirardelli white chocolate chips. Also green food coloring if you want them to look like the ones I made.
Melt the mint chocolate chips first. I don’t own a double boiler so I simply place a glass bowl over a saucepan filled halfway with water and boil.
Once the chocolate is melted, bathed your Oreos in the chocolatey goodness.
Set them on a cookie sheet lined with wax paper.
In the meantime, melt the white chocolate chips. Now, these chips gave me a hard time. You’ll need to pay close attention because if you over heat them or over stir them, they’ll turn into a play dough like consistency. I know there are tricks to prevent this, like adding butter or oil, but if you don’t want to add anything you will need to watch the chips carefully. Add green coloring if desired. I used gel food color since the color turns out brighter than the liquid kind.
Drizzle the cookies with the white chocolate and let them set.
These cookies are delicious and super easy to make. The hardest part is trying to eat just one. Enjoy!
