I have officially reached my final month of pregnancy and we’re counting down the days to our little guy’s arrival. Although I’m thrilled about our baby’s arrival, this pregnancy has been my toughest one yet, both physically and mentally. As much as I enjoy his sweet kicks, I’m looking forward to feeling like myself again and snuggling baby boy outside the womb.
During this pregnancy, I was very limited in what I could do physically. It meant that my workouts were put on hold and my focus shifted to maintaining a healthy diet. One of my favorite foods during this pregnancy has been avocados.

Growing up in a Latino home, avocados were a staple during meals. Although my parents would eat theirs as is, I prefer to get a bit creative and incorporate them into a variety of recipes. Today’s Pineapple Avocado Smoothie Bowl recipe has been one of my favorite treats during this pregnancy. It’s refreshing, flavorful, and satisfies my fruit cravings.
