I finally bought a slow cooker! I know I know, I’ve been living in a cave. Let me tell you how in less than a week it has revolutionized the way I cook. The first meal I made was a beef pot roast because I keep hearing how amazing it turns out in a slow cooker. The verdict: it was delicious! So today I’m sharing this yummy recipe with you all because it’s just too awesome to keep to myself.

Slow Cooker Beef Pot Roast Recipe

First, season your roast with salt and pepper, then sear all sides in a pan. We used a 3 pound bottom round roast. Chuck roast is the preferred cut for pot roast recipes, but the bottom worked out perfect in this recipe and it was cheaper. 😉 Place in slow cooker and start adding vegetables. I added a 12oz bag of baby carrots first.

Next I added 1lb. of red potatoes quartered.

Add 1 onion sliced.

Take 1 package of dry onion soup mix, 1/2 cup of water, 1 teaspoon of Worcestershire sauce and mix in the same pan you seared your roast to get all the yummy flavor left on the pan.

Pour the mix into the slow cooker and add a teaspoon of dried leaf thyme for extra flavor. Close and cook on low for 9-10 hours. About an hour before taking it out, my husband took out the roast and cut it up a bit. Then placed it back into the slow cooker with a cup of beef gravy and mixed it well. This allowed the inside of the roast to pick up the flavor from the yummy sauces it was cooking in.

Serve with a side of mashed potatoes and enjoy every bit of culinary goodness. 🙂

Slow Cooker Beef Pot Roast Recipe
Serves: 6
Ingredients
  • 3 lb. bottom round roast
  • 12 oz of baby carrots
  • 1 lb. of red potatoes
  • 1 onion
  • 1 packet of dry onion soup mix
  • 1/2 cup of water
  • 1 teaspoon of Worcestershire sauce
  • 1 teaspoon of dried leaf thyme
  • 1 cup of beef gravy

  9. An hour before taking it out, take out the roast and cut it up.
