I’m super excited to share this delicious recipe with you today. Now before I continue, I have to give special thanks to my husband for helping me put this recipe together. It was one of those days that my little one wanted to get her hands on everything. She wanted to try out the food we were making, needed a drink, wanted to be held by mommy, and so on. I’m sure many of you can relate to this scenario. So I’m grateful that I had help on this day, but this is not always the case. On days like this when I’m flying solo, I like to put together quick and easy meals that don’t require tons of time.

To continue celebrating National Hamburger Month, I’m sharing this easy meal idea that your family will love. My son is a huge fan of tacos and declared how “yummy!” this meal was. I hope your family enjoys it as much as we did.

Crunchy Taco Stuffed Peppers

Ingredients:

1 box of Crunchy Taco Hamburger Helper®
1 lb of ground beef
1 1/3 cups of milk
6 bell peppers (I used green peppers)
1 cup of corn
1 cup of black beans
1 cup of shredded cheese (I used a mexican cheese blend)

Directions:

In a large skillet, cook ground beef until it’s browned well. Season according to your taste preference with salt and pepper. Drain the ground beef and add Crunchy Taco Hamburger Helper®. Cook according to package instructions (you’ll use the milk here). Add corn and black beans.

Once it’s cooked, cut and hollow out peppers. Fill with taco mixture to the top. I let my husband take care of this step because I’m naturally messy when I cook plus I had my toddler attached to my leg.

Top off the peppers with the corn chips that came in the Hamburger Helper® box. Bake in the oven at 375 degrees for 15-20 minutes. Remove from the oven and add shredded cheese and cook for 5 minutes until cheese melts.

Remove from the over and allow the peppers to cool for few minutes. Be careful when serving since it will be very hot. You can find the ingredients for this recipe, including Hamburger Helper®, at your local Walmart. Click here for a rebate!
