Sloppy Joe Empanadas-A delicious and easy twist to the original Sloppy Joe sandwich recipe. These empanadas are perfect for parties, as a side dish and even dinner time! During the busy holiday season, things can get a bit hectic around here. And although I enjoy having a delicious meal, I’m not a fan of spending hours in the kitchen preparing it when I simply don’t have time. So I try to stick with recipes that my family enjoys, but are not overly complicated. This allows me to spend more time with my family without the mom guilt. Today’s recipe is one of our favorites.  It’s very versatile and can be made ahead for a busy week or even for a holiday party. These Sloppy Joe Empanadas can be eaten as is, or paired up with a favorite side dish. They are full of flavor and even my pickiest eater enjoyed them.  You can also tweak some of the ingredients and make it your own if needed.

Sloppy Joe Empanadas

Ingredients

Dough

2 cups all-purpose white flour
1 teaspoon salt
1 stick of butter (cold)
1 egg
1/2-3/4 cups of cold water

Sloppy Joe Filling

1 1/2 lbs ground beef
1 15.5 oz can of MANWICH Original
1/2 red, orange and yellow pepper diced
1/2 onion diced
1 tablespoon of chives
1 tablespoon of minced garlic
1/4 cup of light brown sugar
salt and pepper to taste

Directions

Mix flour, salt, butter (slice up the stick of butter first) and egg with mixer. Start adding water slowly until you get a stretchy (not sticky) dough consistency. Cover and place it in the refrigerator while your meat is cooking. This is will make it easier to handle when it’s time to create your dough discs. If you prefer to skip this process, you can also purchase ready made dough to simplify the recipe even further. Season ground beef with salt and pepper to desired taste. Once meat has browned, add peppers, onion, garlic and chives. Continue to cook until vegetables have softened. sloppy-joes-meat-cooking Add 1 can of MANWICH Original and 1/4 cup of light brown sugar. Mix well and let it simmer until sauce has heated through. sloppy-joes-empanadas-meat Pull out your dough and roll it out with a rolling pin. I always sprinkle flour on the surface, the rolling pin and my hands, to prevent the dough from sticking. Once your roll out the dough, use a small bowl to create a round medium sized dough disc. Add a 3-4 spoonfuls of meat filling on the dough and fold shut. Seal the empanada with a fork by pressing on the edge on both sides. empanadas-discs Fry each side of the empanda in hot oil. Remove from the pan when the empanada gets a light golden color. Just be careful since it will be very hot, so allow it several minutes to cool before eating. You can also bake the empanadas if you prefer, at 375 degrees for approximately 20 minutes or until golden brown. Just make sure to brush an egg wash before placing them in the oven.
