This past weekend we visited my in-laws and joined them for a family picnic. We don’t get to see my in-laws often, but when we do, we always have a great time. I always look forward to family time with them and seeing our beautiful niece.
My daughter is now old enough to play with her and it’s fun to see them together. My husband has also been blessed to still have his grandmother in his life and I love chatting with her whenever I get a chance. She’s an amazing woman and reminds me of my late grandmother.
For this family gathering, we wanted to bring a side dish along, so we decided to make a Chicken Fajita Pasta Salad. This pasta salad is easy to make and delicious. It’s the perfect dish for family gatherings because of it’s simplicity. No need to spend hours in the kitchen!
Chicken Fajita Pasta
1 box of Barilla® Penne pasta
1 lb of chicken
1 packet of chicken fajita seasoning
1 onion sliced
1/2 of red, green and yellow pepper
1/2 of 15 oz can of corn
1/2 of 15 oz can of black beans
1/2 cup of mayonnaise
1/4 cup of sour cream
Extra virgin olive oil
Salt and black pepper to taste
Set peppers and onions aside. Next, cook Barilla® Penne pasta in the boiling water according to the box directions.
In the meantime, cut chicken into cubes, season with salt and pepper according to taste preference. Cook in skillet until well done. Once chicken is cooked, season with fajita seasoning according to packet instructions.
Place the pasta salad in the refrigerator until cool. Once the pasta has cooled, serve and enjoy! This recipe will yield approximately 8 servings. Simply double the recipe if you are making it for a large family gathering which is what we did. You can find the ingredients for this recipe, including Barilla® Penne, at your local Walmart.
