Although I’ve been more intentional with how I spend my time, there are days that I feel like I’m juggling several things at once and time is not on my side. Between homeschooling, working from home, a very active toddler and day to day chores, I’m stretched pretty thin. It’s funny how our generation have more conveniences than ever before, yet we are busier than our parents were. I remember while I was growing up in Puerto Rico, how my mom focused on the home and family only. A huge contrast from what life is like for me now. But one thing that has remained constant in our family, is sitting down for dinner as a family.

It’s not necessarily a rule that we have, but for the most part we sit down for dinner and eat together. Time at the dinner table is super important to me and I don’t take for granted the time I have with my kids. Even my youngest is growing up very fast, so I’ve learned to embrace the challenging toddler period she’s in.

In celebration of National Hamburger Month, today I’m sharing a ridiculously easy meal idea for the days that you are super tight on time, but want to get dinner on the table and enjoy your little ones.

Easy Cheeseburger Macaroni Dinner

Ingredients:

1 box of Hamburger Helper® Cheeseburger Macaroni
1 lb of ground beef
2 cups of milk
Chopped scallions and tomatoes
Ranch dressing
Salt and black pepper to taste

Directions:

In a large skillet, cook ground beef until it’s browned well. I like to season mine with salt, pepper and minced onion.

While ground beef is cooking, chop scallions and tomatoes, set aside. How much you chop will depend on your personal preference. Drain ground beef, add Hamburger Helper® and follow box instructions (you’ll use the milk here).

Cook in skillet according to instructions. Add scallions and tomatoes before serving, mix well.

Drizzle cheeseburger macaroni with ranch dressing and enjoy! You can also add additional toppings such as shredded cheese or other veggies if you prefer. Yields 4 servings.
